Spinach- Peas Stew (Mutter-Saag)

Ingredients- Spinach- 1 bunch (washed and chopped) Peas- 1 Handful (Washed) Salt- 1 Pinch Black Pepper Powder- 1/2 tsp Garlic - 2-3 (minced) Cooking Oil- 1tsp Directions-  In a heated pan, with 1 tsp of oil, add chopped spinach, salt to taste and a black pepper powder. Let it cook on medium flame for 10 minutes. Add peas, stir it and let it cook for another 5 minutes, covered. On a high flame, keep frying until all water evaporates.

Dahi Wada (Fried Black Gram Balls Dipped in Yogurt)

Ingredients for 4-6 Dahi -wada- Urad Dal (Split Black Gram) - 1 Big Cup Salt to taste Green Pepper- 1 (minced) Yogurt ( 1cup) Black Pepper Powder - 1 tsp (to sprinkle) Red Chilli Powder- 1tsp (to sprinkle) Oil- 1 cup (for frying) Directions- Soal Urad Dal for 30 minutes in hot water. Drain the water and again clean it with cold water for 2-3 times, and drain all water. Blend it in a blender with 1/2 cup of water. Keep it aside in a closed container in a warm temperature for 8 hours. After 8 hours, add salt according to your taste and green Pepper, mix it. Heat Oil in a frying Pan, drop the 1tbsp of batter in a oil and at a medium temperature, fry it on either side till it turns brown in color. Take it out from Oil, and dip it warm water for 15 minutes. Take it out from water and press it big spoons, to take out the excess water from the balls. Methi Baingain (Fenugreek Brinjal)

Naan

Ingredients for 2 people -   All Purpose Flour- 2 Big cups Cooking Oil- 1/4 cup ( to add in dough) Salt to taste Yogurt-  1 small cup Water as required Directions -  In a Bowl, add All purpose Flour with salt and yogurt with 1/2 cup of oil. Mix it properly and  then add water little by little to make a tight dough. Keep it aside in a warm temperature, for 12 hours. Now, add 2 tsp of flour and again knead the dough properly for 2-3 minutes. Divide the dough in equal 6 parts. Make each part of dough in balls. Roll each ball by a rolling pin. Put it inside the Oven to cook for 2 minutes, take it out turn around and again cook it for 4-6 minutes, till it turns light brown on both sides. Enjoy it hot with any curry you wish.

Choley-Bhaturey

Ingredients for 2 people -   All Purpose Flour- 2 Big cups Cooking Oil- 1/2 cup ( to add in dough) + 1 Cup (for frying) Salt to taste Mangrela- Ajwain- 1 tsp Yogurt-  1 cup Water as required Directions -  In a Bowl, add All purpose Flour with salt, ajwain- mangrela and yogurt with 1/2 cup of oil. Mix it properly and  then add water little by little to make a tight dough. Keep it aside in a warm temperature, for 12 hours. Now, add 2 tsp of flour and again knead the dough properly for 2-3 minutes. Divide the dough in equal 12 parts. Make each part of dough in small balls. Roll each ball by a rolling pin. Heat rest of the Oil in a deep pan. Fry the rolled tortilla on both sides, till it turns golden brown in color. Enjoy it hot with Chloey , Yogurt, some chopped Onions and Green Chilli.

Bread Cutlet

Ingredients for 2 people- Bread Cutlet Bread-4 slices Onion- 1/2 (chopped) Green Chilli- 2 (sliced) Potato- 2 big Salt to taste Cumin Powder - 1 tsp Aamchur Powder - 1 tsp Cilantro- 1/2 small cup (chopped) Semolina - 1 cup Oil- 1 cup + 1tsp Directions - Boil the potato, peel the shell and mash it. In an open pan, add oil and heat it, add chopped onion, green chilli, cilantro and fry for 5-7 minutes, till the onions turn brown in color. Add mash potato w/ salt and cumin powder and Aamchur powder. Mix it properly on high flame. In another bowl, take a bowl full of water. Dip 1 slice of bread and squeeze the water out after 30 seconds. Roll the Potato Mixture inside the bread and then dip the bread roll in the semolina bowl. So, that each and every inch is dipped properly with semolina. In another Pan, heat the rest of oil and fry the roll till it turns golden Brown in color. Enjoy it with Cilantro Chutney , Tamarind Chutney or Tomato Sauce.

PineApple Cake

Ingredients - All purpose flour - 2 cups Milk powder - 1 cup Baking powder - 1 tsp Sugar - 3/4 cup Cream - 1 cup Cooking oil - 1 cup Pineapple Pieces- 1cup Milk - 1cup Directions - In a big bowl, mix all purpose flour, milk powder and baking powder. Blend the pieces of pineapple in a blender. In another Bowl, mix sugar, cream, pineapple and cooking oil together, mix to make all the sugar crystals dissolved. Slowly, transfer mixture of flour in mixture of sugar, stirring it continuously. Add a cup of milk as required to make the batter thin, thin enough to make the spoon move easily in the batter. In an oven cooking pan, Spray some oil with little of flour all over the pan. Transfer the batter in a pan and leave it aside for 5 minutes. Cook inside the oven for 30-35 minutes at 400 degree F temperature. Take it out, insert a toothpick in the center of cake, it comes out clear, your cake is done, If no put it again for 5 minutes, and repeat the process.
